Safflower
Safflower is used mostly for color, and gives little to no flavor. It is sometimes referred to as bastard saffron.
Saffron
Saffron, as you may already know, is the spice that exceeds gold in price per unit of weight. It is easy to differentiate the two, Safflower looks like miniature flowers, while Saffron has a thread-like structure.
